Today I'm gonna give you a delicious Cauliflower recipe. This is one of my most favorite dish.. :-) It is very simple and easy to prepare.<br />
Cauliflower is low in cholesterol and carbohydrates, but high in dietary fiber, folate and Vitamin C. It has cancer reducing agents also. But please note, you shouldn't boil the cauliflower, as it reduces its effects. This recipe is very crunchy and yummy to eat. Everyone will surely love this a lot. Now lets get into the recipe.<br />

<u><b>Preparation : </b></u><br />
<u><b><br /></b></u>
1) Cut the Cauliflower into small florets and wash it in running water. (Usually i ask my Mother to do this step, Because I'm so afraid of worms :-( .... But I have to overcome that fear very soon )<br />
2) Now boil enough water in a vessel, when it reaches the boiling point - switch off the stove and put the cauliflower florets in the water. Soak for 8-10 minutes. This helps to cleanse and soften the cauliflower.<br />
3) Now drain the water completely from the cauliflower, using a drain / holed vessel.<br />
4) Take these cauliflower florets in a big basin. Add the chicken 65 masala, besan flour, Ginger Garlic paste, required salt (the chicken 65 powder will also have some salt, so adjust salt accordingly) and egg. Mix well.<br />
5) Marinate this for half an hour. Meanwhile take the corn flour in a bowl, add water and make it as a watery batter. Not too thick and not too watery also.<br />
6) Now heat oil in a pan. Dip the cauliflower florets in this corn flour batter and deep fry in oil. Crispy cauliflower roast is ready now.<br />

Note : Instead of making corn flour batter, You can directly add the corn flour along with the marination. But in this method, you'll not get the crispiness in the roast. The recipe will be very soft in consistency. <br />
<br />
The roast tastes much more better if its served hot. It goes well with Fried rice and Biryanis. It is an excellent side dish for almost every recipes. Please try it and give me your comments. Take Care.. :-)<br />

1) This is called "Mortar & Pestle", we are gonna grind ingredients using this and our hands. :-) If you dont have this, then you can grind the ingredients roughly, using a Mixie or Blender.<br />

2) Take the Ginger, Black Pepper, Basil Leaves and Mint leaves in this Mortar (Base vessel). Now smash all this ingredients using the Pestle (Cylindrical Top) Smash it with all your effort.. :-) Keep it aside.</div>

3) Now pour a glass of water, a glass of milk in a Vessel and add required Sugar. </div>

4) Keep this vessel in the stove and heat it. After 2 Minutes add these smashed / grinded ingredients in the vessel. Stir it slightly.</div>

5) Wait for the milk to boil, now lower the flame and let it boil for 3-4 minutes, so that all the flavors and tastes of the ingredients will get mixed up well in the tea.</div>

6) Now add the tea powder and let it boil for 2 more minutes. Now switch of the stove.</div>

<u><b>Preparation :</b></u><br />
<br />
1) Heat a pan, fry the moong dal for 2-3 minutes, you can smell the aroma of the moong dal at this stage. Switch off the stove and immediately transfer it to another vessel, orelse the dal will get browned due to the pan's heat.<br />
2) Next add little ghee in the pan and fry the cashews until it turns golden brown color. Transfer this to a bowl.<br />
3) Wash the moong dal in running water to remove the dust and dirt. (Please Remember - You should not wash and then fry. It wont get fried because of the wetness. So wash it after frying)<br />
4) Now heat a cooker or a pan. Add oil and ghee in equal proportions. (1 tbsp + 1 tbsp)<br />
5) Add the Cumin seeds and pepper. Let it sizzle, then add the curry leaves and fry for 2 minutes.<br />
6) Now add the chopped ginger and fry till it becomes crispy.<br />
7) Next add the washed Moong dal and required quantity of water.<br />
8) When the water starts boiling, add required salt and washed raw rice.<br />
9) Cover the cooker and cook for 1 whistle, then keep it in sim / low flame for 10 minutes and switch off the stove.<br />
10) After the pressure is completely released, open the pressure cooker and add the fried cashews and mx well.<br />
<br />
Delicious Pongal is ready to be served. This Pongal goes well with Sambar and Coconut Chutney. You can make it even more better, by serving it with Vadas.. :-) Enjoyyy this Divine dish along with your family.<br />

<u><b>Preparation :</b></u>

1) Sieve Maida along with Salt, Coffee Powder and Cocoa Powder. Keep aside.<br />
2) Grease the Baking Tray and Muffin Cups with Butter and Keep aside. Dust with flour if you wish or use a parchment paper instead. (I used Silicone mould)<br />
3) Mix the Red Liquid food color in the Butter milk and keep it aside. You can make Buttermilk from Curd, bu adding water and Curd in 1:1 ratio. (Or if you don't have Curd, add 1tsp vinegar to 1 cup of milk n set aside, beat it once it gets curdled )<br />
4) Beat the butter until it becomes soft, then add sugar and beat well, until it becomes fluffy and white in color.<br />
5) Add eggs to this butter sugar mixture, one at a time and beat well. Add vanilla essence and once again beat well. Add oil and beat until its combined.<br />
6) Now preheat the Oven for 10 minutes at 180°c or preheat the vessel with a lid on, if you're baking in a stovetop. <br />
7) Now alternatively add Maida and Buttermilk little at a time, to the above mixture and mix it gently without any lumps.<br />
8) Now take Vinegar in a bowl,add the baking soda and mix well. It starts bubbling, immediately pour it to the above prepared batter and mix well.<br />
9) Pour this batter in the muffin cups. Fill it till 3/4th level, leave some space for the cake to rise.<br />
10)Bake this for about 15 minutes (for cup cake) and 45 minutes (for the big heart shaped cake) at 180 degree Celsius for 30 to 35 minutes until a toothpick inserted in the middle of the cake, comes out clean.<br />
11) Leave it to cool. Then transfer it to an air tight container and refrigerate for 1 hour.<br />
12) Now you can do the frosting as you wish. I made cream cheese frosting and decorated the cake. </div><div dir="ltr" style="text-align: left;" trbidi="on"><br /></div><div dir="ltr" style="text-align: left;" trbidi="on">I'll upload homemade Cream cheese recipe in my next blog. </div><div dir="ltr" style="text-align: left;" trbidi="on">

<u><b>Preparation :</b></u><br />
<br />
1) Remove the brown color sides of the bread using a knife.<br />
2) Crush the white part of the bread using your hands, into fine crumbs.<br />
3) Now add milk to this crushed bread, little at a time and keep mixing it well, until it reaches a dough consistency.<br />
4) Now make sugar syrup - Dissolve the sugar in water and let it boil. When it reaches one string consistency, Add crushed elaichi and switch off the stove.<br />
5) Now make small balls out of the bread flour.<br />
6) Heat oil in a pan and deep fry these balls.<br />
7) Drop them into the sugar syrup and keep aside for 30 minutes, to let the jamuns absorb the sugar syrup.<br />

1) Take the bread slices and cut it into small pieces. Put it in a bowl.<br />
2) Crush the bread into a fine powder using your hands.<br />
3) Now add the 1/2 cup of milk and sugar.<br />
4) Mash it well using a spoon or a masher. Then add essence and mix well. Keep it aside.<br />
5) Take a flat bottomed bowl and keep it aside.<br />
6) Now caramelize the sugar by heating a pan with 2 tbsp of sugar and 2 tsp of water.<br />
7) When the sugar turns into a dark brown color syrup, pour it in the flat bottomed vessel and spread it well in the base of the vessel. Keep it aside for 2-3 minutes, for the syrup to set.<br />
8) Now pour this bread mixture into the bowl. Cover this mixture with a aluminum foil. Poke small holes at the top, for the steam to escape. (I used butter paper since i didn't had aluminum foil. I placed it on top of the bowl and tied around the bowl using a thick thread).<br />
9) Steam cook this in a cooker for 25-30 minutes. Then cool it down for atleast an hour.<br />
10) Then refrigerate this for minimum 3 hours and transfer to a plate. Cut it into your desired shapes.<br />

I tried to make a heart shape on top of my pudding, using milkmaid. But it turned out to be like an apple.. :-p<br />

2) Boil the chopped vegetables (carrot, beans, green peas) in a cooker. Keep it for 2 whistles.<br />
3) Drain out the excess water from the vegetables. Add this along with the mashed potato and mix well.<br />
4) Add required salt and mash the vegetables very well, using your hands.<br />
5) Add chopped coriander, green chillies and garam masala. Mix it together and make it blend along with the vegetables.<br />
6) Crush the bread slices using your hands. Add this with the vegetables and mix well. (Bread slices are added to give a grip to the dough, so that it wont loosen up when you put it in the oil).<br />
7) Take the maida in a bowl, mix it with water and make a watery dough.<br />
8) Now make small ball shaped cutlets and flatten it between your hands. <br />
9) Dip this in maida flour and roll it in bread crunbs.<br />
10) Heat oil in a pan and shallow fry these cutlets.<br />
<br />
Delicious cutlets are ready to be served. You can serve it with tomato sauce or any dips of your choice.<br />

<u><b>Preparation :</b></u><br />
<br />
1) Sieve the maida 3 times - along with salt, baking powder and baking soda. Keep it aside.<br />
2) Mix the yeast in warm milk. Let in for 10 minutes.<br />
3) Transfer the maida to a big basin. Make a small hole in center. Pour the yeast, curd and sugar in this hole.<br />
4) Add little melted ghee and knead this flour into a soft dough. Add little warm water if its too hard.<br />
5) Close this basin with a wet cloth. And place a plate over the cloth and cover the dough for 6-7 hours.<br />
6) Please note to leave some gap in the basin, for the expansion of the dough. <br />
7) Now the dough would have expanded well. Make medium sized balls out of this dough.<br />
8) Roll it like chapatis, and then hold the two ends of it and pull apart.<br />
9) Then you can cook it in tawa as you cook chappatis. Orelse you can follow the below method to get a restaurant style Naan.<br />

<u><b>Another method to roast Naan : </b></u><br />
<br />
1) Heat a pan (A pan with a Handle). After it is heated well, minimize the flame.<br />
2) Apply water to one side of the Naan. Stich this in the pan and close it with a lid.<br />
3) After two minutes, open the lid - you can see it havin large air bubbles.<br />
4) Hold the handle of the pan and turn it toward the flame.<br />
5) Cook the other side in direct flame for a minute. Now Naan is ready to serve.<br />
6) Apply little butter on top of it and serve.<br />

1) Soak Raw rice (Pacharisi) in water for 2 hours. Drain the water and spread it in a clean cloth.<br />

3) Roast this flour in a pan, till it turns color. Store this in a air tight container.<br />

4) Grease the Idiyappam maker with oil. Fill this balls into the Idiyappam maker.<br />
5) Squeeze it in circulate motion in the Idli plates. (If you're using Idli plates without cloth, then you can grease the Idli plates with oil) <br />
6) Steam this in Idli cooker for 10 - 15 minutes. Now Idiyappam is ready.<br />
<br />
This is the Basic version of Idiyappam, which is served with sweetened coconut milk. This also has many other variations like Tomato Sevai, Lemon Sevai etc., I'll post those versions later. You can enjoy this Idiyappam with Vegetable Kurma, or with Non veg curries. But i like this Coconut milk combination. I hope you enjoyed this recipe. 1) Grind together - Ginger, Garlic, Mustard seeds, Red Chillies, Cumin seeds, Fenugreek, and Coriander seeds to a fine paste. (if you wish, you can dry roast & add: cloves-3, cinnamon-1 stick & cardamon-4)<br />
2) Apply this paste and salt to the chicken and mix well. Keep aside.<br />
3) Heat oil in a pan and fry the onions till it becomes brown n crispy. Take out & drain the excess oil using a tissue paper. Grind this onions to a fine paste along with the Vinegar.<br />
4) Add this paste to the chicken and mix well. Marinate for an hour.<br />
5) Heat oil in a thick bottomed pan. Add the marinated chicken and cook till it becomes tender.<br />
6) Garnish with chopped coriander leaves and serve hot.<br />

3) In a bowl, mix the besan flour, turmeric powder, cumin powder, garam masala, coriander powder, red chilli powder and 1 table spoon oil. Its not necessary to make it as a paste consistency. It has to be little dry.<br />
4) Now open the pan, & sprinkle the above mixture evenly on top of the Broccoli. Dont mix it.<br />
5) Close the pan and cook for 3 minutes.<br />
6) Now open the pan, sprinkle little water and mix well. Once again close cook for 3 minutes and switch off the stove.<br />

1) Chop the onions and tomatoes. Cut the chillies lengthwise and chop the gingers very finely. Keep it aside.<br />
2) Grate the carrots. Fry the cashew nuts in ghee,and in the same pan roast the rava for 3 minutes. Set aside.<br />
3) Heat oil in a pan and then add Mustard, Channa dal and Curry leaves. Fry for 2 minutes.<br />
4) Then add the chopped ginger and green chillies. Fry till the raw smell goes.<br />
5) Next add the chopped onions and fry till it becomes soft, now add the carrots and fry for 3-4 minutes.<br />
6) After the carrot is cooked well, add the tomatoes and salt. Fry well till the tomatoes get cooked.<br />
7) Now add the required quantity of water. Wait till it starts boiling. Now add the rava little by little.<br />
8) Mix it well without lumps and cover the pan with a lid. Cook in low flame for 5 minutes. Then switch off the stove and add the fried cashew nuts and mix well.<br />

1) In a bowl, add the besan flour and idli flour. Mix it slightly.<br />
2) Now add required amount of salt, chilli powder and asafoetida powder.<br />
3) Sprinkle little water and mix well without forming lumps.<br />
4) This flour should neither be too watery nor to hard.<br />
5) Now break each of the papad / appalam into 4 pieces.<br />
6) Dip these pieces in the flour, and deep fry in oil. (The flour should be coated well in both the sides)<br />

<u><b>Preparation :</b></u><br />

1) Seive the Maida 3 times along with Baking Powder & Baking Soda. Keep it aside.<br />
2) Grease the muffin tray with butter or oil, and dust it with some flour. I didn't have muffin tray, so i used porcelain tea cups.<br />
3) Now take the mashed bananas in a bowl, and add sugar to it. Beat well till the sugar dissolves.<br />
4) Take the eggs in a bowl & beat it well till it becomes fluffy. Pour this eggs to the banana mixture.<br />
5) Add the banana essence along with this and mix well.<br />
6) Preheat the oven for 10 minutes. <br />
7) Now add the maida, little at a time and keep mixing it softly. (Don't beat after adding maida)<br />
8) Add oil to this batter and mix well.<br />
9) Fill the greased muffin cups with this batter till it reaches 3/4th level. <br />
10) Now bake this in the oven for 20 - 25 minutes. Now insert a toothpick in the middle of the muffins, if it comes out clean, then the muffins are done. After 15 or 20 minutes, remove it from the cups & serve. <br />

5) Add required salt and chilli powder. Mix it well without adding water.<br />
6) Make it into small balls, flatten them and deep fry in oil.<br />

4) Apply this to on the chicken. Add required Salt. Mix well & marinate this for 1 hour.<br />
5) Now heat oil in a pan. Deep fry this marinated chicken in a medium flame.<br />

<u><b>Preparation :</b></u><br />
<br />
1) Take the required milk in a bowl. Add sugar to it, and mix well till the sugar dissolves. Add ghee to this.<br />
2) In another bowl take the maida, wheat flour & a pinch of salt. Mix it evenly, with your hands.<br />
3) Now add milk to this flour & mix well. Make it like Chapati dough consistency.<br />
4) Now split it into medium sized balls. (like you make for chapati.)<br />
5) Spread it evenly like a chapati. Then cut it into pieces using a knife or cutter.<br />
6) Heat oil in a pan & fry these pieces till they turn brown.<br />
7) Fry in medium flame, so that it will be fried evenly. Drain excess oil using a tissue paper & serve.<br />

1) Sieve the maida 2 times, along with the baking powder, baking soda & salt.<br />
2) Grease a vessel with butter & sprinkle maida over it. Keep it aside.<br />
3) Beat the eggs till it becomes frothy. <br />
4) Beat the butter along with sugar till it becomes fluffy.<br />
5) Now preheat the oven or heat sand in a cooker (if you are making cake in pressure cooker).<br />
6) Add the beaten eggs to the Butter-Sugar mixture. Beat well till it blends together. <br />
7) Add maida along with it, little at a time & keep mixing it softly. Dont beat after adding maida. <br />
8) Now add pineapple essence & carrot. Mix well.<br />
9) Pour this batter into the greased tray. Level the top.<br />
10) Bake for 50 minutes, Insert a toothpick or a fork in the middle of the cake. It should come out clean.<br />

1) Cut the baby corns vertically, into two halves. Apply salt over it & keep aside for 10 minutes.<br />
2) In a bowl, mix the Maida, Corn Flour, Buttermilk, Chilli powder, Baking Soda & Salt. Make it a thick batter. (Add little water if required) <br />
3) Soak the Baby corns in this batter. Let it for 15 minutes.<br />
4) Heat oil & deep fry the soaked baby corns.<br />
5) Drain the excess oil using a tissue paper.<br />
6) Serve hot with butter dip or any other dips of your own choice<br />

4) Now take the required amount of nuts & fruits in a bowl. Add 3 teaspoons of maida & mix it. Keep it <br />
aside.This is to ensure that the nuts & fruits dont settle at the bottom of cake.<br />
5) Beat the butter along with sugar till it becomes fluffy.<br />
6) Now preheat the oven or heat sand in a cooker (if you are making cake in pressure cooker).<br />
7) Beat the eggs till it becomes frothy.<br />
8) Now add this egg solution to the butter sugar mixture & once again beat well.<br />
9) Add maida, little at a time & keep mixing it softly. Dont beat after adding maida. <br />
10) Add pineapple essence, spice powder (Cardamon,Cloves,Cinnamon&nutmeg grinded together) & mix. <br />
11) Add the fruits & nuts. Mix it slightly & pour to the tray. Level the top & bake for 50 minutes.<br />

This plum cake tasted too good. This was my 1st plum cake n yet it came out so well.. :-) You can try my plum cake/tutti fruity cake for this new year. In the authentic recipe they'll soak the fruits & nuts in rum/brandy atleast for a week. This is the only difference. It tastes better if your soaking time is more maybe a month even. If you wish you can also try the authentic plum cake version & give me your comments. </div>

4) Mix well immediately & make it into round shaped balls.<br />
5) Decorate it with Cashew nuts & serve.<br />

1) Slice the onions in lengthwise. Chop the tomatoes & Slit the chilli.<br />
2) Heat oil in a rice cooker. Add cinnamon, cardamon, cloves, star anise, bay leaf & saute for 2 minutes.<br />
3) Add the chilli, sliced onions & fry till it becomes translucent. Now add ginger garlic paste & fry well.<br />
4) After the raw smell goes, add the tomatoes & required salt.<br />
5) Then add the chilli powder, coriander powder & garam masala. Fry till the tomatoes gets smashed well.<br />
6) After the tomatoes are cooked well, add the coriander & mint leaves. Saute for 3-4 minutes.<br />
7) Now add the water & let it boil. Then add the washed rice & little ghee.<br />
8) Mix well & close the cooker. Wait for one whistle, then keep in sim for 5 minutes & switch off the stove.<br />

This is a simple n tasty chutney, which goes well with Idli, Dosai, & Panniyaram. The color of this dish itself is so appetizing...!! Now lets see how to prepare this spicy n delicious chutney..<br />

<td> 1 </td> <td> Red/Big Onions </td> <td> 3 Nos </td> </tr>

<td> 2 </td> <td> Tomatoes </td> <td> 6 Nos </td> </tr>
<tr>
<td> 3 </td> <td> Gingelly Oil </td> <td> 2 tablespoon </td> </tr>
<tr>
<td> 4 </td> <td> Mustard seeds </td> <td> 1 teaspoon </td> </tr>
<tr>
<td> 5 </td> <td> Salt </td> <td> As Required </td><td></td></tr>
<tr>
<td> 6 </td> <td> Chilli Powder </td> <td> 1 teaspoon </td> </tr>

<u><b>Preparation :</b></u><br />
<br />
1) Cut the onions & tomatoes into smaller pieces.<br />
2) Grind this Onions & Tomatoes into a fine paste. Keep it aside.<br />
3) Heat gingelly oil in a pan & add mustard seeds.<br />
4) Wait for the mustard seeds to splutter & then add the above paste into the pan.<br />
5) Add required salt & chilli powder. Mix well.<br />
6) Keep on stirring till the oil separates & the chutney turns into a fine red color. <br />
7) Switch off the stove & transfer it to a bowl.<br />
