Indian Plum Cake

Hi Dears.. Im gonna present you a delicious plum cake recipe for this new year.. :-) This is a simple plum cake. I didn't use Rum/Brandy in this recipe :-) So you can give it a try, without any doubts or confusion.. Im not a big fan of raisins & walnuts. So i just used Cashews, Cherries, Tutti Fruity, Almonds & little Dates. You can use any dry fruits & nuts as per your choice.


Ingredients :

  1   Maida   250 gms
  2   Sugar   250 gms + 1/2 cup   
  3   Butter   250 gms
  4   Eggs   5 Nos
  5   Tutti Frutti   1/2 cup
  6   Cherry   1/2 cup
  7   Cashew Nuts   1/4 cup
  8   Almonds   1/4 cup
  9   Pineapple Essence     1 teaspoon
  10   Spice Powder   1/2 spoon
  11   Baking Powder   1 teaspoon
  12   Baking Soda   1/2 teaspoon
  13     Salt   1 pinch 

Preparation :

1) Sieve the maida 2 times, along with the baking powder, baking soda & salt.
2) Grease a vessel with butter & sprinkle maida over it. Keep it aside.
3) Prepare the caramel sauce:
        Mix half cup of sugar with 1/2 teaspoon of water & heat it in low flame. When it turns to a dark brown
        color, add half cup of water to it & once again heat it till the sugar dissolves completely. Keep it aside.
4) Now take the required amount of nuts & fruits in a bowl. Add 3 teaspoons of maida & mix it. Keep it
    aside.This is to ensure that the nuts & fruits dont settle at the bottom of cake.
5) Beat the butter along with sugar till it becomes fluffy.
6) Now preheat the oven or heat sand in a cooker (if you are making cake in pressure cooker).
7) Beat the eggs till it becomes frothy.
8) Now add this egg solution to the butter sugar mixture & once again beat well.
9) Add maida, little at a time & keep mixing it softly. Dont beat after adding maida.
10) Add pineapple essence, spice powder (Cardamon,Cloves,Cinnamon&nutmeg grinded together) & mix.
11) Add the fruits & nuts. Mix it slightly & pour to the tray. Level the top & bake for 50 minutes.

This plum cake tasted too good. This was my 1st plum cake n yet it came out so well.. :-) You can try my plum cake/tutti fruity cake for this new year. In the authentic recipe they'll soak the fruits & nuts in rum/brandy atleast for a week. This is the only difference. It tastes better if your soaking time is more maybe a month even.
