Chicken Vindaloo

Chicken Vindaloo - This is a hot n spicy continental dish, which originated in Goa. This is now served in many other cuisines also. It mainly includes vinegar and spices. This recipe can be done using - Chicken, mutton, pork, prawn or even mushrooms. Im gonna proceed with chicken. Lets get into the recipe now..!

Ingredients :

   1    Chicken    1/4 kg
   2    Onion    1 cup (chopped)
   3    Ginger Paste    1/2 tsp
   4    Garlic Paste    1/2 tsp
   5    Mustard Seeds    1/2 tsp
   6    Coriander Seeds    1/2 tsp
   7    Cumin Seeds    1/2 tsp
   8    Fenugreek    1/4 tsp
   9    Vinegar    1 tsp
   10       Red Chilli                    4-5
   11    Coriander Leaves    1/2 cup (chopped)   
   12    Salt    As Required
   13    Oil    As Required

Preparation :

1) Grind together - Ginger, Garlic, Mustard seeds, Red Chillies, Cumin seeds, Fenugreek, and Coriander seeds to a fine paste. (if you wish, you can dry roast & add: cloves-3, cinnamon-1 stick & cardamon-4)
2) Apply this paste and salt to the chicken and mix well. Keep aside.
3) Heat oil in a pan and fry the onions till it becomes brown n crispy. Take out & drain the excess oil using a tissue paper. Grind this onions to a fine paste along with the Vinegar.
4) Add this paste to the chicken and mix well. Marinate for an hour.
5) Heat oil in a thick bottomed pan. Add the marinated chicken and cook till it becomes tender.
6) Garnish with chopped coriander leaves and serve hot.
